Since 2012 many metro city in India has witnessed a massive number increase in food trucks on road, many have gone to extent to create niche in their menu, setup and even creative design implicating a revolution in the food truck industry.

Aspiring entrepreneurs who were local homegrown chefs, home cooks, emerging brands and grassroots level experimental individuals tried their hands on the Meals on wheels Concept.

Almost everybody failed due to its on-ground reality which was no one was ready.

A product so appreciable yet bound to fail due to its loophole of a basic operating procedure as a on road concept which cannot be successful due to many reasons pointed out by the MFTS.

Over the period of 2010 till 2022 over 100+ food truck entities were witnessed in Mumbai alone.

Almost every entity had to shuts its operation down due to the certification or compliance issue for its on road vending activity.

Lack of support, cannibalisation of business, under the table haftas, non-stationery parking, and operational issue or hazards of a sustainable food truck kitchen.

Very few brands have survived knowing that on road operation is not possible hence taken a step to survive in a corporate space, high street societies or even a mall parking space which in turn has churned out their expense as good a retail rent space making it more hard to survive for their basic ROI.

Sustainability of this model is not long term as a food truck gives you a limited working space, safety precautions working with live fire or induction if your truck has not been fabricated well with necessary inducted materials.

A food truck entity needs a backend kitchen no matter what, a dedicated electric connection for hassle free induction cooking and an ecofriendly drainage facility. Live fire in any cases is not a great idea due to hazard and safety regulations as per fire chiefs which is a very important matter to not ignore which many low budget fabrications units do their so-called food trucks.

Marketing strategy, unfixed geo locations and food aggregators vendors like Swiggy, Zomato are some of the minor hurdles which overcome daily ops for minimal turnovers in revenue.
